Assistant Professors Dr. Eng. Agata Antoniewska-Krzeska from the Department of Food Gastronomy and Food Hygiene, and Dr. Jorge Custodio-Mendoza from the Department of Technique and Food Product Development, are serving as guest editors for a special issue of Applied Science on Chromatographic Methods for Functional Foods and Their Application to Food Quality, Safety, and Characterization.
Functional foods offer health benefits beyond basic nutrition and often contain various ingredients like vitamins, minerals, antioxidants, amino acids, and phytochemicals. Accurate analysis of these components is crucial for ensuring their claimed benefits, safety, and compliance with regulations. As consumer demand for health-enhancing products grows, precise and reliable analytical techniques are essential.
This special issue explores a range of chromatographic methods, including Gas Chromatography (GC), High-Performance Liquid Chromatography (HPLC), and Ultra-High-Performance Liquid Chromatography (UHPLC). It highlights innovative applications, such as novel stationary phase technologies, the use of green solvents, and cutting-edge techniques like Nano-liquid Chromatography (nano-LC) and Comprehensive Two-dimensional Chromatography (GCxGC, LCxLC).
